- Hard Anodized Surface: The aluminium body undergoes an electrochemical process that hardens its surface to a degree significantly tougher than standard aluminium. The resulting dark, non-porous finish resists scratches from everyday utensils and remains stable when acidic or alkaline ingredients – such as tomato sauces or baking soda – are present during cooking.
- Induction-Ready Base Plate: A disc of magnetic stainless steel is bonded to the base, making the pot responsive on induction rings and adding stability on smooth glass or ceramic hobs. The thick, flat base also helps the pot resist warping when moving between high and low temperatures.
- Low-Stick Character: While not a coated nonstick surface, the dense, smooth texture of the anodized interior reduces the likelihood of food bonding stubbornly during simmering. A brief soak and a soft sponge usually restore the surface to a clean state after cooking starchy pulses, rice or thick soups.
- Riveted Handle System: The long main handle and the shorter helper handle are both made from cast stainless steel, attached with rivets engineered to stay tight under heavy loads. The handles are shaped to remain relatively cool on gas hobs when not directly over the flame, though an oven mitt is recommended after the pot has been in the oven.
- Glass Lid with Steam Vent: A shatter-resistant tempered glass lid, framed in stainless steel, traps steam while the small vent controls internal pressure during prolonged cooking. The clear lid allows a quick visual check on the simmer without interrupting the steady heat built up inside.
- Oven and Hob Use: The pot can be placed in an oven up to moderate temperatures, useful for finishing braises or keeping food warm. It works on all hob types – induction, gas, electric, ceramic and halogen. The glass lid, however, has a lower heat tolerance than the metal body and should not be used under a grill or at very high oven settings.
- Cleaning and Maintenance: Hand washing with a non-scratch sponge and mild washing-up liquid is the gentlest way to preserve the dark anodized finish. The pot can also go through a dishwasher cycle, though repeated dishwasher use may gradually lighten the exterior tone. Avoid harsh alkaline cleaners and steel wool, which can mar the surface.
